What actually affects freshness
The real enemy of roasted coffee isn't time on its own, it's oxygen. Once beans are exposed to air, they slowly oxidise and lose the aromatic compounds that give coffee its flavour, eventually tasting flat or dull. Light, heat and moisture speed that process up.
The clever bit is that good packaging holds almost all of this at bay, which is why sealed coffee stays fresh for months rather than days.
How one-way valve bags keep coffee fresh
Freshly roasted coffee naturally releases carbon dioxide for a while after roasting, a process called degassing. Quality coffee is sealed into bags fitted with a one-way valve: the valve lets that CO₂ escape, while preventing oxygen from getting back in.

- Avoid decanting beans into open hoppers in larger quantities than you'll get through in a day or so.
